Preserving the collection for future generations means that sustainability is at the very heart of all we do. We work to bring you exceptional experiences whilst keeping the planet in mind. We work with suppliers who source produce from the British Isles and seasonality is a cornerstone of menu development. We are conscious of the need to reduce the consumption of dairy, and meat from ruminant animals. We also believe that British farms that work regeneratively, producing grass-fed meat and dairy products are a vital part of the UK’s long-term agriculture. Our policy is to promote less, and higher quality meat and dairy consumption. Our menus offer a variety of delicious vegan, vegetarian and vegetable-led dishes.
Sustainability is at the heart of all we do.
We source exclusively British beer, and our house beer cleverly uses food waste to brew. High-quality kegged wine is available too, enabling us to reduce glass waste by 11 tonnes annually. Our food waste is commercially composted and 77% of all our waste is recycled, with the rest incinerated via an Energy from Waste programme.
